Grilled Pizza

For mother’s day, my family had a cookout – in the sense that we were outside, and we were cooking. My dad is always full of great ideas when it comes to the kitchen, and he suggested that we make grilled pizza. The result was nothing short of incredible. The crust (recipe from Cuisine at Home magazine; I’ve posted it here) was what made it so incredible – crisp and light but still just a little tender in the center without being soggy. We made four kinds, shown below – I’d recommend going light on the toppings, using fresh ingredients (especially since so much produce is in season right about now).

Top to bottom, left to right:

Margherita: thin tomato slices, chopped fresh basil, fresh shredded mozzarella

Hawaiian: ham and pineapple chunks, fresh shredded mozzarella

Mediterranean: chopped artichoke hearts and black kalamata olives, roasted red pepper slices, fresh basil, sweet onion slices, feta cheese crumbles

Goat cheese: thin tomato and sweet onion slices, fresh basil, goat cheese crumbles

*Note: before I put toppings on the pizza crusts, I topped them lightly with a simple “sauce” of roasted diced tomatoes, finely chopped shallots and dried herbs.

Wanted

Black and White/Pink/Multi

I’m in desperate need of heeled sandals for spring and summer. I’ve amassed a huge collection of sandals and flip flops of all shapes, colors and sizes, and yet have somehow neglected the fact that I don’t have heels for less-casual occasions (wedges and closed-toe heels obviously don’t count). Knowing that Zara has a huge collection of fabulous and affordable shoes, I hopped over to their site to see the latest styles they had in for spring – and (of course) I wasn’t disappointed. The black and white pair is more neutral and conservative but still modern, while the bubblegum pink and multicolored options would be great to mix with pastels and brights alike or to wear as a statement on their own.

Keep Calm and Carry On

I just realized on Friday that I haven’t posted in almost a month. Wow. I really, truly cannot believe how fast that time has passed. The past four weeks have been a huge, stressful whirlwind of stuff. Everything was happening all at once, and I didn’t have enough time to do all of the things that I really had to do, let alone the things I wanted to do – like blog.

This past week, frankly, was pretty torturous. But the silver lining is that things are slowing down now, Stress is fading, I’ve got fewer things to do, and more time to go back to doing the things I love (which, at the moment, is sleeping in and relaxing). I’m keeping calm (and carrying on), taking each day as it comes and not worrying about the future.

During all that stress and mania, I felt like I lost touch with myself. I pretty much kept my head down and powered through, and that really wiped me out. I didn’t feel like myself.

And then I realized that I haven’t really been being myself for a while now, cheesy as that sounds. So I’ve been relaxing and focusing on regaining a sense of self, and I’m feeling a lot better.

And, on Friday, I came back here to sarah kate style. I started playing around with headers and links and CSS, which I really kind of love, and it reminded me how much I love blogging. (You may have noticed the new header and altered navigation bar.) So I began whipping up a ton of posts that will start appearing on Monday.

At the moment, though, I’m really, really looking forward to my trip to the UK this summer. In just a little over a month, I’ll start packing up all of my necessities for two weeks abroad. I’ll be spending my birthday there, too, and I’m planning on a twilight dinner cruise on the Thames – so I’m really starting to dream of the view above.
