Classic Stripes

This is actually what I wore on my flight back to the US – the most comfortable items of clothing I brought just so happened to look casually put-together. This top I picked up at Zara for the equivalent of about $17, and it’s so comfortable that I’ve been living in it since. It’s one of those pieces that makes me love summer fashion, and will make it harder to say goodbye to.

Beet and Goat Cheese Salad

This isn’t a picture-heavy post, but that’s because this is so simple there aren’t really that many steps to take pictures of. Beets have been my latest food obsession – I’ve always loved them, but I only recently started buying them raw at the store and roasting them myself (using these totally foolproof instructions). Their silky texture, rich color and sweet-meets-earthy flavor contrasts beautifully with the sharp, tangy notes of goat cheese…but goat cheese is just awesome anyway. I ate way too much when I was assembling this.

For the salad:
-Baby spinach
-1 small roasted beet
-about 1/4 cup of goat cheese (just kind of tear off little chunks until you’re happy with the beet to goat cheese ratio)
-a handful of walnuts

For the dressing:
-Plain Greek yogurt
-fresh mint, finely chopped
-vegetable oil
-lemon juice
-white wine vinegar
-sugar and salt, to taste
*Note: when I make salad dressings, I never measure anything. I just throw stuff in a bowl, taste, adjust, and repeat, until it tastes how I want it. This dressing should be creamy and tangy with a kick of mint.

Neon Pants

I have a love-hate relationship with pants. I always find myself drawn to pairs with fun prints or interesting details, but I tend to prefer the comfort and ease of dressed and skirts. This pair, though, combines the best of both: they’re bright and unique while still being lightweight and extremely comfortable. They’ve been my go-to pants so far this summer – paired with a solid t-shirt, it’s a stylish and completely un-fussy look.

Floral Blazer

I’ve come around on blazers in the last few years. I used to oppose the long, straight sleeves and sharp shoulders in fear that I’d look too…professional. I chalk my appreciation of blazers up to this one – I almost didn’t get it, thinking it was too weird of a combination of fun and serious. But the bright, graphic pattern sold me, and I’d say I made the right choice. With the sleeves rolled up, it’s one of my go-to summer pieces – it keeps an outfit polished but still playful, and adds a dose of color to an all-white ensemble.
